Honey alone ferments poorly because it lacks nutrients; that's why two are included: the combined yeast nutrient of DAP, inactive yeasts and vitamin B1, as well as yeast nutrient salt. The citric acid gives the mead freshness. For clarifying after fermentation, you combine gelatin and silica sol; the order depends on the tannin (low in tannin: silica sol first, rich in tannin: gelatin first), a preliminary trial decides.
