The Kitzinger wine hydrometer determines the alcohol and extract content of wine, fruit wine and dessert wine without a distillation apparatus. It is a development of the Oechsle must hydrometer with a scale from −10 to +20 °Oechsle in whole degrees.
How it works: measure the density of 100 ml of wine at 20 °C. Then boil the sample down until the alcohol has evaporated, top it up with water to exactly 100 ml and measure again. The difference gives the alcohol from the table; the second reading shows the extract. According to the manufacturer this is more accurate than a vinometer or must hydrometer. The Joenos hydrometer jar without scale fits as a measuring vessel.
