- Yeast: Cider Fresh brings out notes of apple and citrus and, according to the manufacturer, ferments even below 15 °C. It settles well, so you can rack early. The cider pure-culture yeast also suits you if you want to make the cider sparkling later. One 5 g sachet is enough for 10 to 50 litres.
- Quantity: the Apple Wine & Cider Set is meant for one batch. The Meadow Orchard Set contains yeast, enzyme, nutrient salt and sulphur powder for up to 200 litres.
- Juice: it must not contain preservatives. Shop-bought apple juice starts fermenting more slowly than freshly pressed juice, which is why yeast nutrient belongs in it.
- Federweisser: juice, a pure-culture yeast, a little yeast nutrient and an airlock are enough. The vessel must never be sealed tight.
The process is explained in “Apple wine from shop-bought juice” and “Make your own Federweisser” in our Wine School. The booklet “Apple Wine and Cider” to download is under The Maischewerk Booklets.
