You already have the yeast, or you're just putting it in your cart? The fermentation companion brings the three agents that, alongside the yeast, belong in almost every fruit or grape batch: yeast nutrient salt, anti-gelling agent and sulfur powder, in one package instead of gathered individually.
Each agent has its moment. You add the anti-gelling agent during juicing: the enzyme breaks down pectin and mucilage, you get more juice, and the wine can later be filtered clearer. You stir in the yeast nutrient salt when you start the batch; it supplies the yeast with nitrogen so that fermentation doesn't stall. The sulfur powder (potassium disulfite, E224) comes after fermentation and protects the wine from oxidation and unwanted microorganisms if it is to be stored.
Included in the set
- 1 × Joenos Yeast Nutrient Salt, 2 x 10 g for fermentation (Item no. SKU-100224): two sachets of diammonium phosphate, 10 g each; the pack states 10 g for about 10 liters, we recommend 3 g per 10 liters, the upper limit of the German guidelines for wine-like drinks.
- 1 × Arauner Kitzinger Anti-Gelling Agent 50 ml for Breaking Down Pectin (Item no. SKU-111650): enzyme preparation against pectin, works best at moderate warmth; amount depending on the type of fruit according to the package instructions.
- 1 × Joenos Wineguard Sulfur Powder E224, 10 g (Item no. SKU-103602): potassium disulfite with 50 % active SO2 for the time after fermentation.
The two sachets of yeast nutrient salt are enough for a batch of up to about 20 liters. You dose the anti-gelling agent and sulfur powder according to the package instructions; they go further.
