Vitamin B1, also called thiamine or aneurin, is a nutrient for the yeast. During the vigorous main fermentation the yeast produces it itself in larger amounts, but in the initial fermentation phase it is often only scarcely available. A dose at the start therefore supports the fermentation start.
The 6 g sachet goes a long way and, as a guideline, is enough for around 1000 liters of must. In commercial winemaking, an upper limit of about 60 mg per 100 l applies to grape wines. Set the exact dosage according to the package instructions. The product comes from the Arauner Kitzinger range.
