Joenos Wineguard Sulfur Powder 3x10 g, Potassium Metabisulfite

Sulfur is the standard insurance in the wine cellar: it protects the wine from oxidation, which turns it brown and maderized, and keeps unwanted microorganisms such as acetic acid bacteria and wild yeasts in check.

The powder is potassium metabisulfite (E224) with around 50 % active SO2. You dissolve the weighed amount in a little water and stir it in during racking or before bottling. The exact dosage per liter is stated on the pack, and here precise beats generous.
