The distilling mash set is for you if you want to ferment fruit, for example from your own garden, into a mash that will then be distilled in a licensed distillery. The set consists of six parts, one of each: a yeast, two yeast nutrients, an enzyme preparation, an antifoam agent and an airlock. That way you have the yeast, nutrients, enzyme, antifoam and fermentation attachment for your batch together in one place, don't have to gather anything individually and won't forget any of these components. You will also need fruit and a fermentation vessel.

Each part has its task in the process. The Brennmaisch yeast is made for tough conditions: it copes with difficult fermentation conditions and high-alcohol mashes, ferments slowly but steadily, and finishes the sugar even when a fermentation stalls. According to the manufacturer, it is neutral and robust, with a low tendency toward reductive off-flavors (little H2S and SO2 formation), but it has a high nutrient requirement. That is why two nutrients are included: the yeast nutrient salt supplies nitrogen in the form of diammonium phosphate, and the yeast nutrient complex combines nitrogen, vitamins and minerals. The anti-gelling agent breaks down the pectin and mucilage in the fruit; pectin binds the juice, and the enzyme releases this bond. The antifoam keeps the foam of heavily foaming mashes in check during fermentation so that nothing overflows. The airlock lets the fermentation gas escape without air reaching the mash.

  • 1 × Joenos Wine Yeast Brennmaisch, 5 g for difficult fermentation (Item no. SKU-100246): highly active dry pure culture yeast that keeps working even under difficult fermentation conditions and finishes the sugar in your fruit mash.
  • 1 × Joenos Yeast Nutrient Salt, 2 x 10 g for fermentation (Item no. SKU-100224, one pack with 2 x 10 g): supplies the yeast with nitrogen so that fermentation doesn't stall.
  • 1 × Joenos Yeast Nutrient Complex, 10 g Combination Preparation (Item no. SKU-111721): supplies the yeast with a combined dose of nutrients and supports a reliable, complete fermentation.
  • 1 × Arauner Kitzinger Anti-Gelling Agent 50 ml for Breaking Down Pectin (Item no. SKU-111650): enzyme preparation that breaks down the pectin and mucilage in the fruit and so releases the bond with which pectin holds on to the juice.
  • 1 × Joenos Oeno Foam Stop 10 ml, Antifoam for up to 150 l (Item no. SKU-111753): silicone-based defoamer that curbs foaming in heavily foaming mashes; according to the manufacturer, the 10 ml are enough for up to 150 liters of mash.
  • 1 × Joenos Plastic Airlock 10 mm for Monitoring Fermentation (Item no. SKU-111755): sits on the fermentation vessel, lets fermentation gas escape, keeps air out and shows you by the rising bubbles how actively fermentation is running.

How to use the set

  1. Put the fruit into the fermentation vessel as mash and stir in the anti-gelling agent. The amount depends on the type of fruit, dosage according to the package instructions; the enzyme works best at moderate warmth.
  2. Add the yeast nutrient salt and yeast nutrient complex at the start of fermentation, dosage in each case according to the package instructions. According to the manufacturer, mix the complex beforehand in 10 times the amount of water; with it, more is not better.
  3. Rehydrate the yeast: according to the manufacturer, stir 5 g into 50 ml of water (38 °C), let it swell for 15 to 20 minutes and then add it to the mash.
  4. If the mash foams heavily, add the antifoam directly according to the package instructions; with stubborn foam, a second dose may be necessary.
  5. Close the fermentation vessel, fill the airlock with a little barrier liquid or water and insert it into the hole in the lid or bung. The 10 mm connection fits common holes.
  6. Follow the course of fermentation by the rising bubbles in the airlock. The yeast ferments slowly but steadily.
  7. Take the fermented mash to a licensed distillery for distilling (see note below).

The yeast is enough for 10 to 50 liters. According to the manufacturer, the yeast nutrient salt is measured at 10 g for about 10 liters, so the pack with 2 x 10 g is enough for about 20 liters. How far the yeast nutrient complex and anti-gelling agent go depends on the dosage according to the package instructions. According to the manufacturer, the antifoam is enough for up to 150 liters of mash.

Important about distilling: In Germany, distilling is not permitted without authorization from customs (Zoll). According to customs, producing alcohol by distillation is only permitted in bonded distilleries (Verschlussbrennereien) or lump-sum distilleries (Abfindungsbrennereien); the private production of alcohol by distillation is not permitted. Your fermented mash therefore belongs in a licensed distillery for distilling. As a private individual, under certain conditions you can produce alcohol from fruit you have harvested yourself in a lump-sum distillery as a so-called Stoffbesitzer (owner of the raw material); customs decides on the distilling permit required for this, and no sugar may be added.
