This anti-gelling agent helps you control the consistency of jams, marmalades and preserves. It counteracts crystallization and prevents an overly firm result, so your spreads gel evenly. This is particularly useful with fruits low in pectin.

You dose the agent sparingly and add it to your batch while cooking. How much you need depends on the type of fruit and the desired consistency; the exact dosage is stated on the bottle. The 500 ml bottle with screw cap is enough for several batches and can easily be resealed and stored.
