Honey wine — mead — is made when yeast ferments the sugar in honey into alcohol. This starter kit B is meant for your first batch of your own: the included party keg doubles as the fermentation vessel, so you don't need a separate demijohn.

The process is manageable. Dissolve the honey in warm water, add the yeast, seal the keg with an airlock, and let it stand at around 18-20 °C. Over several weeks the yeast breaks down the sugar; afterwards you rack the young mead off the yeast sediment. Exactly how much honey, water, and yeast go into the keg is stated in the included instructions — stick to them, otherwise the sugar balance goes off.

You don't need this if you already have a fermentation vessel with an airlock in your cellar — then a single yeast will do. For a clean start without hunting down individual parts, the kit is the more convenient route.
