Bentonite is the standard agent against protein haze: in grape wines, dissolved but chemically unstable protein compounds often remain after fermentation, which can later cloud the wine in the bottle. Ca bentonite binds this protein and pulls it to the bottom as sediment. As part of a blue fining, metal is additionally removed, for which a representative sample is mandatory beforehand.
Besides that, bentonite is suitable for clarifying fining: suspended turbidity solids and colloids such as mucilage are captured and precipitated, and the wine becomes clear. Dose according to the package instructions; the 1 kg pack is enough for several batches.
