Tartaric acid is the acid that occurs naturally in the grape. As L(+) tartaric acid (E334), it can be used in a targeted way to raise the acidity of grape must and wine when the batch brings too little acid of its own.
This tartaric acid is highly pure and comes in a 1 kg bag. As a guide, the manufacturer states up to 2.5 g per liter for wine and 1.5 g per liter for grape must. Measure the acidity beforehand, then you dose precisely and don't over-correct past your target.
